Fishy...

As the holiday season is behind us, we're all trying to go back to a healthier(-ish!) lifestyle. Exercising, reading, and eating well are usually the top three on the list, right? Here is a recipe to stay true to your new year's resolutions while still enjoying your dinner.



Ingredients (serves 4)

  • 4 cod fillets

  • 2 tbsp olive oil

  • 2 tsp garlic powder

  • 2 tsp dried rosemary

  • 2 tsp dried thyme

  • 2 tsp dried oregano

  • salt and pepper, to taste

  • the juice and peel of half a lemon

Method

  • Preheat the oven to 200C

  • Combine the olive oil, lemon juice and zest, herbs, garlic powder, salt and pepper in a large bowl

  • Place the cod fillets in a baking dish and pour the olive oil mix on top. Let the fish marinate for 10 minutes

  • Bake for 15-20 minutes (or until the fish is cooked through) and enjoy!
